Look no further for your perfect Valentine's gift - show your love with 6 of Delano's delicious Batts Hill gin infused Valentine's cupcakes.
150g self raising flour
2 large eggs
½ tsp baking powder
zest 1 lemon
1 tbs Batts Hill gin
1tsp vanilla extract
50ml Batts Hill gin
½ juice of lemon
30g brown sugar
Butter cream icing:
130g salted butter
30ml Batts Hill gin
300g icing sugar
Preheat oven to 180 degrees. Beat the butter, sugar and vanilla extract together until fluffy. Add eggs one at a time, beating them into the mixture. Add flour, baking powder, lemon zest and Batts Hill gin. Fold the mix together until just combined (be careful not to over beat). Spoon into paper cases and bake for 12-14 min. Test if they are cooked with a knife. If it comes out clean they are done. Allow to cool for 10 minutes.
While the cakes are baking make the syrup. In a small saucepan add all the syrup ingredients. Heat the pan until the sugar has melted, stirring frequently.
One the cakes have cooled, prick the cakes with a skewer a few times to make small incisions. Now spoon the syrup over the cupcakes.
New for the icing. Beat the butter until soft and smooth, add the icing sugar and continue beating it until smooth and lump free. Add Batts Hill gin and cointreau, and continue beating until smooth. Cover the icing mixture and place in the fridge for ½ hour to firm up.
Finally decorate your cupcakes and serve (being careful not to let anyone underage to get hold of one!).
