Old Flame

Batts Hill Cucumber and Clementine Gin Old Flame cocktail with flamed orange peel garnish

The Old Flame is a genuine classic, created by legendary bartender Dale DeGroff in 2001: a Negroni softened by fresh orange juice and a splash of triple sec. Made with our Cucumber & Clementine Gin, it gets an extra citrus lift, finished with a proper piece of bartender theatre, a flamed orange peel.

Ingredients

Method

  • Pour all the ingredients into a shaker with ice and shake well.
  • Strain into a chilled martini glass.
  • Garnish with orange zest or a flamed orange peel (see below).

How to Flame an Orange Peel

This is a proper piece of bartender's theatre, a quick burst of flame that always turns heads. You can absolutely try it at home.

  • Cut a fresh piece of orange peel, at least an inch in diameter. A thicker piece is easier to work with.
  • Once your cocktail is made, hold the peel skin-side down above the glass.
  • Light a match and wave the peel slowly over the flame for a couple of seconds to warm the natural oils.
  • Twist and squeeze the peel sharply over the lit match, snapping your forefinger and thumb together to release a burst of oil.
  • You should get a momentary flash of flame right over the drink.

Be patient, it might not work perfectly the first few times. Use fresh oranges and keep practising, you'll get there.
